Director of Operations - Upscale Fine Dining & Modern NYC Restaurant Group
**Location:** New York City, NY
**Salary:** $140,000 - $170,000 + Competitive Benefits

The Director of Restaurants is responsible for assisting with developing and operating a cost-effective operation which exceeds guest expectations through the service of high-quality food and beverages, in a clean and comfortable atmosphere. They have overall responsibility for all aspects of the restaurant related to sales, profit and the development of people; assumes total responsibility for internal day-to-day operations of the assigned restaurants in conjunction with the General Manager. The Director will ensure operations are in accordance with corporate policies, programs and procedures while ensuring overall guest satisfaction and the profitability of all assigned properties.
**Responsibilities:**
**Pre-Opening Duties:**
- Collaborate on pre-opening budgets with the Corporate Controller, EVP of Operations, and Ownership.
- Review the Critical Path with the executive team.
- Develop pre-opening staffing guides and operational plans with the leadership team.
- Select and standardize OS&E items with relevant stakeholders.
- Establish steps of service and train staff accordingly.
- Assist HR in hiring FOH and BOH positions.
- Implement a Manager In Training program.
- Create training manuals and schedules for new hires and ongoing staff training.
- Set up and manage profiles on Sevenrooms, Resy, and Triple Seat.
**Operational Duties:**
- Ensure the restaurant meets and exceeds financial goals.
- Analyze profit and loss statements, develop plans, and ensure implementation.
- Maintain high standards of food, beverage, service, and cleanliness.
- Conduct daily walk-throughs to address maintenance and cleanliness issues.
- Proactively identify and resolve potential problems.
- Oversee purchasing and inventory management.
- Utilize technology platforms for reporting and reservations.
- Compile and analyze reservation and guest complaint data.
- Manage staff information in POS and payroll systems.
- Develop special promotions in collaboration with the Corporate Press Coordinator.
- Maintain appropriate staffing levels and assist with recruitment and hiring.
- Handle disciplinary actions in conjunction with HR.
- Oversee administrative tasks, including payroll and reservations.
- Evaluate and promote teamwork among staff.
- Perform additional duties as assigned by the executive team.
**Financial & Administrative Duties:**
- Educate and develop the management team.
- Manage revenue and sales performance.
- Control expenses and manage budgets.
- Build relationships with ownership and partners.
- Analyze financial data and trends.
- Conduct weekly financial meetings and monitor labor costs.
- Track comps, voids, promos, returns, and transfers.
**Human Resources Duties:**
- Support HR with onboarding and payroll processes.
- Manage tip sheets, time clock modifications, and payroll deductions.
- Handle terminations, pay increases, and job changes.
**Other Requirements:**
- Availability for early mornings, late nights, weekends, holidays, and long days.
- Independent decision-making skills.
- Proficiency in Microsoft Office (Outlook, Teams, Word, Excel).
- Familiarity with Restaurant 360, Toast, and other restaurant management systems.
- Strong attention to detail and commitment to excellence.
- Excellent communication skills in English.
- Professional demeanor and a proactive attitude.
- Strong budgeting, analytical, and problem-solving skills.
**Qualifications:**
- 4-5 years of multi-unit FOH management experience in high-volume restaurant operations.
- Fine dining experience required.
- Experience in opening new restaurants.
- Strong financial and inventory management skills.
- Proficiency with technology platforms (Aloha, Micros, Toast, Tripleseat, Restaurant 360, Sevenrooms, OpenTable, Resy).
- Knowledge of HR laws and topics relevant to the NYC restaurant industry.
- Positive and outgoing team player with excellent problem-solving abilities.
- Open availability, including late nights, holidays, weekends, and long days.
